SWEDISH CULINARY WEEK AT HOTEL ICON
Michelin-honoured Swedish Chef Henrik Norström comes back to Hong Kong
Hong Kong, 2 November 2012 - To the delight of local foodies, Hotel ICON will welcome the return of renowned Swedish Chef Henrik Norström, Michelin-honoured and silver place winner of the culinary world’s most prestigious competition, Bocuse d’Or.
Supported by the Consulate General of Sweden and the Swedish Trade Council in Hong Kong, Chef Norström will revisit Hong Kong and Hotel ICON together with Chef Peter Johansson and Chef Daniel Frick, both from the Michelin-starred restaurant, Lux in Stockholm, Sweden.
On Fri, Nov 9th, the celebrated culinary masters will conduct a series of workshops at Hotel ICON’s Food & Wine Academy for the university’s students. The educational sessions will include Chef Workshop, Bartender Workshop, and VinoTech Lab.
To commence the special appearance of the award-winning chef, Hotel ICON will host a gala dinner on Nov 8th Bistro 1979, hosted by Mr. Jörgen Halldin, Consul General of Sweden to Hong Kong. Guest of honour will be Sweden’s Minister for Rural Affairs, Mr. Eskil Erlandsson.
As part of his visit to Hotel ICON, Chef Henrik Norström has specially crafted a Swedish menu to be available at the ground-floor GREEN from November 3rd -9th. Hotel ICON Takes Guest Service to Another Level with New FCS i-Guest Technology
Premium hotel pilots smartphone application, simplifying guest experience customization before, during and after hotel stays

Introducing "Long Xing" Above & Beyond Mooncakes
Celebrated Local Designers Craft Art for Mid-Autumn Delicacies

Each year since 2008, “Project Twelve” has invited celebrated Asian artists and designers to create art or design using the relevant zodiac sign as a theme. To mark the year of the Dragon, “Project Twelve” commissioned award-winning designer Chelsia Lau to create a “Long Xing” dragon sculpture, which will be displayed on the 1st floor of Hotel ICON from now until 30th September. Inspired by the powerful strokes of Chinese calligraphy, Chelsia crafted a fluid design, evoking the cursive, flowing brushstrokes. Chef Jean-François Arnaud Makes Sweet Impression at Hotel ICON
France’s Renowned Pastry Chef Hosts Two-Day Master Class at Premier Hotel
Hong Kong, 20 March 2012, Hotel ICON - As Hong Kong’s premier teaching and research hotel, Hotel ICON is committed to educating hospitality students and local trade personnel. To this end, Hotel ICON together with the School of Hotel and Tourism Management (SHTM) at The Hong Kong Polytechnic University (PolyU) and Fonterra Brands (Hong Kong) Limited welcomed France’s legendary Chef Jean-François Arnaud who earned the prestigious Meilleur Ouvrier de France, to host a pastry Master Class. Held at SHTM/Hotel ICON’s Food & Wine Academy on March 14 and 15, the two-day event attracted a number of industry experts to interact with the pastry and confectionary master.
The audience comprised industry professionals from JW Marriot, Wynn Macau, Kowloon Shangri-la, Excelsior, Maxim’s, and St. Honore, as well as staff from the SHTM and Hotel ICON. During the two-day workshop, attendees enhanced pastry techniques and picked up the latest trends from one of France’s culinary masters.
Conducted in collaboration with Fonterra Brands (HK) Limited, manufacturer of Anchor products, Chef Arnaud used quality New Zealand dairy products to create a number of sweet confections. The gourmet goodies included a strawberry nest, a chocolate bunny, a red fruit cheesecake and a creamy coffee and chocolate sabayon.
“Fonterra is proud to be associated with such an exciting event,” said Gordon Ma, Foodservices Manager of Fonterra Brands (HK) Limited. “It is a rare treat to witness one of France’s most acclaimed French chefs at work and have him share his knowledge with local students and industry professionals.”

Hotel ICON Showcases Napa Valley's Premium Wines
US Winemaker Partners with Premier Hotel as Part of the Food & Wine Academy
Hong Kong, 17 January 2012 - In part of the premier hotel’s Food & Wine Academy, Hotel ICON invited John Kimmey, the Asia Manager for Stag Leap Wine Cellars, to interact with the staff and students and share wine pairing tips with connoisseurs on Thursday, 12 January.
The event kicks off in the afternoon with an interactive sharing session between Kimmey and the staff and students at Hotel ICON.
Later in the evening Hotel ICON welcomed over 30 gourmands and industry experts to an exclusive evening of food and wine tasting at the hotel’s Michelin-honoured Above & Beyond restaurant, attendees paired a number of Napa wines explored the cross-cultural pairing of Napa Valley wines and Cantonese cuisine.
In collaboration with US-based Stag’s Leap Wine Cellars, diners sampled a selection of wines paired with Above & Beyond’s signature dishes, including Wok-fried Beef Cubes with Goose Liver and Fresh Basil. Kimmey introduced guests to a number of award-winning wines from California’s Napa Valley, including Hands of Time 2009, and S.L.V Estate Cabernet Sauvignon 2005.

Hotel ICON Takes Dining to New Heights with Above & Beyond
Iconic New Restaurant Delivers Authentic Chinese Dishes and Spectacular Citywide Views
Hong Kong, July 6 2011 – Hotel ICON, an upscale Hong Kong hotel in the heart of Tsim Sha Tsui East, announces the opening of its chic-sleek Above & Beyond restaurant. Designed by the world famous Conran & Partners and located on the hotel’s 28th floor, Above & Beyond features panoramic views of Victoria Harbour. Aside from seasonal Cantonese favourites, the menu includes dishes from other Chinese cuisines.
Sophisticated and effortlessly stylish, the Above & Beyond lounge resembles a private club. Handpicked books, art-related tomes and eclectic Asian artifacts line the library shelves, creating an intimate, relaxed space. The dark timber walls, designer desk lamps and spectacular floor-to-ceiling views of Victoria Harbour add to the allure. Iconic Hong Kong designer Freeman Lau curated the space, choosing a provocative range of paintings from such local artists as Chow Chun Fai.
Beyond the lounge, guests enter Above & Beyond’s main dining room. Intimate table settings run parallel to the full-length windows while a subtle palette of walnut brown, cool greys and taupe create a relaxed, elegant setting. Leather-upholstered booths extend along the length of the restaurant, offering diners sweeping views of Victoria Harbour and Hong Kong.
As Above & Beyond’s Executive Chef, Joseph Tse brings over 37 years’ experience to the role. Formerly the Chef de Cuisine at the Mandarin Oriental Hong Kong, and The Aberdeen Marina Club’s Horizon, Joseph serves a delectable mix of ever-popular Cantonese classics and must-try Chinese delicacies. “Honouring tradition and guests’ preferences have been my recipe for success,” says Joseph. “Many Chinese restaurants today are being creative for the sake of it. I believe there are good reasons why classic dishes stand the test of time.”
Having lived in Shanghai and Beijing, Joseph takes inspiration from a variety of Chinese cuisines. “We are an international hotel welcoming guests from around the world,” he explains. “Our menu caters to different taste buds.”
Selected menu items include:
- Pan-fried Lobster with Egg White and Black Truffle ($238). Boasting a delicate texture, the flavours are subtle and sumptuous.
- Steamed Coral Crab and Glutinous Rice (market price). This dish presents a palate-pleasing blend of crab roe, high soup and 10-year-old Huadiao wine.
- Wok-fried US Tenderloin Cubes with Goose Liver and Fresh Basil ($268). Australian-grown Wagyu beef and French foie gras are cut into precise, small cubes before being pan-fried to reveal the juicy flavours.
- Smoked Bresse Pigeon with Oolong Tea Leaves. Meaty and succulent, the pigeon is cooked in traditional Chiu-chow marinate sauce with fine oolong tealeaves.
- Double-boiled Pear with Osmanthus Served with Chinese Petit Fours (HK$45). With its sweetly floral aroma, Joseph’s signature dish conveys a zesty freshness, making it an ideal summer dessert.
Lunchtime diners can look forward to gourmet dim sum. The menu includes such favourites as Steamed Pork Dumplings with Scallop ($45) and Steamed Shanghai Dumplings with Crab Meat and Sea Urchin ($48).
For an exclusive party or special event, guests can choose one of three ultra-stylish private dining rooms. Available in various sizes, the largest dining room features a functioning kitchen. While enjoying the view of the Hong Kong skyline, guests can have a private chef serve them made-to-order, individual meals. The other two private dining rooms exude an artful style with vibrant colours and separate lounge areas.
Above & Beyond also features a well-stocked walk-in wine cellar and private tasting area. Nigel Chan, Head of Wine at Hotel ICON, personally selected wines from around the world. Rocco Yim of the Hong Kong-based Rocco Design Architects Ltd oversaw the hotel's architectural design.William Lim, Managing Director of Hong Kong's CL3 Architects, designed the contemporary interiors, including the guestrooms, the Silverbox ballroom and the lobby's grand sweeping staircase.
Fusing innovative design and classic style, Lim's goal was to create spaces of ultimate comfort. "Comfort is always my priority when designing guestrooms" explains Mr. Lim. "We wanted to create a sense of richness and elegance, then let the spectacular views complete the story"
Fashion doyenne Vivienne Tam also contributed to the project. A graduate of Hong Kong Polytechnic University, Tam designed ICON's exclusive VT Suite, which reflects the artist's signature look of unforced elegance and chic simplicity.
Hotel ICON's commitment to local creativity and innovation extends to the staff uniforms. Award-winning Hong Kong designer Barney Cheng fashioned the stylishly clean-cut outfits.
Tommy Li, one of Hong Kong's most prominent graphic designers, created Hotel ICON's eye-catching logo. Fluid and evolving, the logo signifies the hotel's central location as well as its outreach and commitment to the community.
The confluence of art and design is also evident in the artwork. Renowned Hong Kong designer Freeman Lau curated the hotel's eclectic collection. Hotel ICON currently houses works of art by some of Asia's best talents, including Cheung Yee, Kan Tai-Keung, Nancy Chu Woo, Hung Keung, Pauline Lam, William Furniss, John Fung, Chow Chun Fai, Tsang Chui Mei and Terence Lee.
"I wanted to give a comprehensive picture of the creative industry here in Hong Kong" says Mr. Lau." The aim is to show a diverse group of art works so that guests can get a taste of the different elements in the creative sector."
As well as highlighting Hong Kong's most in-demand artists, Hotel ICON also features the iconic work of international designers, including Conran & Partners and Patrick Blanc.
Conran & Partners designed Hotel ICON's restaurants, including "Above & Beyond", the sleek-and-chic private members' facility on Level 28, and The Market, an open-plan restaurant offering a tempting selection of pan-Asian and Western favourites.
French botanist and artist Patrick Blanc created and installed the lavish 18-meter vertical garden in the Hotel ICON lobby. Measuring 230m2, the verdant garden wall is the largest of its kind in Asia.
